Description
Potash, known as Akanwu in Igbo or Kaun in Yoruba, is a naturally occurring alkaline substance often used in African cooking. It comes in solid, crystal-like chunks and is typically derived from the ash of burned plant material.
Uses:
- Culinary purposes:It acts as a tenderizer in dishes like ukodo (yam pepper soup) and helps soften vegetables or legumes. It is also used in preparing dishes like Ewedu soup and Ugba salad.
- In baking: Potash is sometimes added to give baked goods a crisper texture.
It must be used in small quantities because it has a strong, slightly bitter taste.
